Lyric Montgomery Kinard uses the word expansion to describe her faith journey because, as she says, “it feels like spirituality has burst my Mormon box wide-open.” In Episode 166, she joins Susan and Cynthia to talk about her experiences as a Latter-day Saint. It’s another glimpse into the life of a woman who’s given herself permission to walk the path in her own way, honest about what fills her and what doesn’t, and willing to speak her truth.

Butternut Squash
peel, cube, toss generously in olive oil, salt, garlic powder
roast at 400° till browned on edges
Blend Squash with the following ingredients until it is very smooth
All ingredients are measured to taste - don’t bother with measuring spoons!
2 Tbsp Honey
1-2 Tbsp Curry powder
Salt as needed
Splash of Liquid Smoke (the magic ingredient, but not required)
1 can drained Chickpeas
Olive Oil to smooth it out more
Roasted Eggplant (prepared same as squash) if available
Eat with sliced sweet crisp Apples (honey crisp, pink lady, etc.)
Notes:
Leave out or add more Chickpeas
Butter beans, or any soft white bean works as well as chickpeas
Pumpkin or Sweet Potatoes (without extra sweeteners and spices) work
Roasted Eggplant is an excellent addition
I roast ALL my vegetables with smoked salt
Wear kitchen gloves when peeling Butternut Squash - it has some weird thing in it that can turn some people’s skin into hard, cracked, leather. It only affects your dermis and is totally safe to eat.
